We simply love picnics because we can sit anywhere with our loved ones and enjoy our time. Most importantly, we can decide completely freely what to eat: vegan, vegetarian, or gluten-free. All no problem!

Vegan Empanadas as Special Fillers

Mix 300 g flour, 100 g melted vegan butter, 1 tsp salt, 1 tsp baking powder, and 150 ml plant-based milk to form a firm dough and chill it for at least 30 minutes.

For the filling, sauté one onion and two garlic cloves in oil, then add 300 g of vegetables of your choice (how about eggplant and tomato?) and season everything with salt, pepper, and your favorite spices. Once the mixture has cooled down slightly, fold in vegan shredded cheese for a savory kick.

Now it's time to roll out: Briefly knead the dough again before rolling it out and cutting out dough circles with a large glass. Fill each circle with a tablespoon of filling, fold it over, and seal the edges with a fork.
- Before baking the pastries for approx. 20 min at 200°C, you can brush them with a marinade made of three tablespoons of soy milk, two tablespoons of olive oil, and a pinch of turmeric to make them crispy and brown.
A bit more work, but totally worth it! Empanadas are the perfect picnic snack.
Fruity Salsa as the Perfect Chip Companion
- Sauté two red onions, two garlic cloves, and 1-2 chili peppers (all finely chopped) in 2 tbsp of oil of your choice. Add 1 tbsp of sugar for a slight sweetness, allowing everything to caramelize a bit.
- Now, chop 500g of tomatoes, season well, and simmer them. After 10 minutes, add 400g of canned tomatoes and season everything with lime juice.
- After another 5 minutes of simmering, you can add a handful of chopped cilantro and parsley and let the salsa cool down.
You can easily bring the homemade salsa to your picnic in a clean screw-top jar.

Thoroughly wash 2 organic limes, quarter them, and put them in a blender.

Add two glasses of ice cubes, five tablespoons of coconut milk, three tablespoons of agave syrup, and 700 ml of water and blend everything until creamy.
- Then you can strain the mixture through a fine sieve or a filter cloth - done.
