These tasty treats are topped with chocolate frosting, chocolate-dipped plantain chips, and orange segments. So festive and incredibly delicious! 😍
Ingredients for 12 cupcakes:
200g spelt flour
100g raw cane sugar
4 tbsp cocoa powder
4 tsp baking powder
300ml oat milk
2 tbsp apple cider vinegar
100g neutral oil
1 tsp organic orange zest
100g margarine
150g powdered sugar (sifted)
30g cocoa powder
1 tsp orange flavoring
Orange segments
1 pkg. El Origen Plantain Chips Salty
80g dark chocolate
1. Preheat the oven to 180 degrees Celsius.
2. To make vegan buttermilk, mix the oat milk with the apple cider vinegar. Let this mixture sit for at least 5 minutes.
3. In a bowl, mix together the flour, sugar, cocoa powder, and baking powder.
4. Now add the oil to the buttermilk and mix briefly.
5. Using a mixer on a low speed, slowly add the liquid to the flour mixture. Mix only until there are no large lumps. Do not overmix!
6. Fill muffin cups three-quarters full with the batter and bake for 15 minutes. Let the muffins cool in the slightly open oven. This will prevent them from "collapsing."
7. Sift powdered sugar and cocoa powder into the margarine and beat with a hand mixer until creamy.
8. The muffins must be completely cooled before applying the frosting.
9. Melt chocolate in a double boiler and use it to dip the chips. Let the chocolate harden.
10. Decorate the cupcakes with the frosting, chocolate chips, and orange segments. Enjoy! 🧁✨
