Who doesn't love it - pasta salad? In Ken's new recipe (Instagram: @talesofhorizon), we breathe new life into this classic by using fresh herbs, healthy whole wheat pasta, and vegan feta.🌱
For a Latin American twist, we top the salad with our crunchy plantain chips with sea salt and voilà: dinner is served! 😍
Ingredients for about four large or six smaller portions:
250g pasta (here, whole wheat pasta)
1/2-1 package vegan feta
1 small red onion
10-20 black olives, pitted
10 cherry tomatoes
2 handfuls of arugula
1/2 package plantain chips (Salty)
Fresh basil
Fresh oregano
For the dressing:
7 dried tomatoes
3 tbsp oil from the dried tomatoes
3 tbsp herb vinegar
2 tbsp water
1 clove garlic
1 tbsp Italian herbs
1 tbsp salt
Instructions:
1. Cook the pasta as described on the package, rinse with cold water, and set aside.
2. Cube the vegan feta, halve the cherry tomatoes, finely dice the onion, and wash the arugula.
3. Prepare the dressing with a blender. Add all ingredients to the blender and blend for about one minute until a creamy consistency is achieved.
4. Combine everything in a large bowl, but be sure to add the fresh herbs, arugula, and plantain chips last.
5. Add the dressing just before serving to prevent some ingredients from getting soggy. Now there's only one thing left: enjoy! ✨
