For those of us staying at home, Ken (Instagram: @talesofhorizon) has brought the perfect autumn recipe for the cold & wet November weather: Pumpkin Ginger Coconut Soup with crunchy plantain topping! 🎃🥣🍂Pumpkin soup is probably the best recipe for dreary weather, right?😍
Ingredients for 4 servings:
500g Hokkaido pumpkin
2 carrots
1 onion
1 clove garlic
1 thumb-sized piece of ginger
1 tsp oil
350ml vegetable broth
250ml coconut milk
200ml orange juice
1 tbsp soy sauce
Salt
Pepper
1 packet plantain chips paprika

Instructions:
1. Cut pumpkin, carrots, onion, garlic, ginger into small pieces.
2. Roast everything for about 10 minutes.
3. Add vegetable broth and orange juice and cook for 10 minutes.
4. Now add coconut milk and soy sauce and puree with an immersion blender.
5. Add salt & pepper to taste.
6. Garnish and serve with plantain chips and a little more coconut milk.
7. Get comfortable and enjoy! 🥣✨🕯️
